The Banana-Nutella Breakfast Muffins are incredibly delicious, easy to make and perfect to impress your family and friends. You can wrap them for a nice homemade gift or most likely fight with your other half for the last piece. Oh, yes! They are that yummy!
- 2 eggs
- 1 cup sugar
- 2 cups flour
- 1 cup oats
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- a pinch of salt
- ½ cup milk
- ¼ cup vegetable oil (or 125g melted butter)
- 2 teaspoon vanilla extract
- 2 bananas, mashed
Preheat the oven to 180°C.
Line your muffin tin with paper cases.
In a bowl mix your dry ingredients: flour, oats, sugar, baking powder, baking soda and salt. Mix until combined.
In a large bowl beat the eggs. Add the milk, vegetable oil/melted butter, vanilla extract and mashed bananas. Stir until well combined.
Add the flour mixture and mix until smooth.
Divide the mixture into your cases, then put a teaspoon of Nutella on the top of each muffin and swirl with a toothpick.
Bake for ca. 20 min or until a toothpick comes out clean.
