“What I Eat In A Day” must be one of my favorite blog posts to read. I really like experimenting with my food and checking other people’s food preferences is fun and inspiring. Eating healthier has definitely been my number 1 New Year’s resolution. No matter how challenging it can be, I do my best to stick with it. I have been vegetarian for over than 6 years now, but I have been trying to cut milk (lactose intolerance) from my diet and avoid cheese as much as possible (and fail). So, I decided to share with you what I have been eating today and hopefully inspire you to eat healthier and try some of my favorites meals.
What I Eat In A Day #1
I start the day with a big glass of water with freshly squeezed lemon juice. I turned that into a habit and I have been enjoying the benefits ever since. It is very refreshing and helps my body wake up. It is very beneficial for the skin, balances the pH levels, detox the body, etc. Sometimes I like to add freshly grated ginger for extra immune-system boost.
Today for breakfast I am having a Chia Pudding with frozen raspberries. I have been obsessed with that stuff! It is so easy to make and extremely good for us and our body. I usually prepare a few on Sunday and have for a few morning during the week.
1 cup almond milk
3 tbsp chia seeds
1 tsp maple syrup
a handful of frozen berries, blended
Mix and leave in the fridge for an hour or overnight.
For lunch, I am making a yummy and healthy power bowl with bulgur and veggies.
1 cup bulgur, 2 cups of water
veggies of your choice – I am using potatoes and zucchini
100 ml cooking cream (you can skip that step if you want to keep it vegan)
salt, pepper, olive oil, and Italian seasoning
Cook the bulgur on a medium low heat with 2 cups of water and some salt. Cut your veggies and mix them with the cooking cream, the olive oil, and the spices. Bake them for around 30 minutes on 200°C. Enjoy!
For dinner, I am making a delicious pasta salad.
pasta of your choice
olives (I am using olives with lemon filling), cherry tomatoes, cheese of your choice, smoked almonds (you can use any nuts that you like)
olive oil, salt, Italian seasoning
Cook the pasta according to the instructions on the packet. Cut the olives, the tomatoes, and the cheese. Mix all of the ingredients and enjoy. I like to eat it warm, but if you prefer a cold pasta salad, let it cool before consuming.
