It’s Blogmas Day 2 and I have another food related post for you. In my defense, I have been really ill this past two days and haven’t gone out of the apartment for over 30 hours. So naturally, I have been baking. I am loving all of those easy, delicious and quick recipes, as anyone would, and chose to make my favourite vegan brownie cake. Well, it didn’t turn out to be the prettiest but it was delicious. Here is the recipe ⇓.
Vegan Brownie Cake Recipe
What you need for the brownie batter:
- 1 avocado, mashed
- 1 can coconut milk
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 cup cacao powder
- 1 1/2 cup brown sugar
- 1 tsp salt
- 1/2 cup vegetable oil
For the fruit-jello fix:
- 90g vegan gelatine fix
- 1 cup hot water
- 1 cup ice cold water
- fruits for decoration
Preheat oven to 180°C. In a large bowl mix all of the dry ingredients. In a separate bowl mix the avocado, coconut milk, vegetable oil and add to the dry ingredients. Stir until smooth. Spray your cake tin with baking spray and pour the batter. Bake for 20-25 minutes or until toothpick comes out dry. Do not remove the cake from the tin!
Let the cake cool completely before you start preparing the jelly mixture.
In a medium bowl mix the gelatine powder with 1 cup of boiling water and whisk for 2 minutes. Add the ice-cold water and stir well.
Decorate your cake with the fruits of your choice and pour the mixture on top (still in the baking tin) and refrigerate for 2-3 hours or overnight.
