Happy 2018, guys!!!
I just woke up and naturally, the first thing on my mind was FOOD. Nothing new there. So I thought, you need to try my sweet potato and carrot pie ASAP.
I had a really lovely New Year’s Eve dinner with friends at home and the star of the show was my vegan
Sweet Potato and Carrot Pie
It is the most creamy, filling and delicious pie EVER and you need to make it like NOW! It super easy to make. You know me, I don’t cook anything complicated. So, here is the recipe:
1 pie/quiche crust
5 sweet potatoes
5 big carrots
1 small zucchini
1 red bell pepper
a handful of spinach + extra for decoration
salt, pepper, garlic powder, olive oil
How to prepare:
- Preheat oven to 200°C and peel and slice all of the vegetables.
- In a baking tin lined with parchment paper season the sweet potatoes and carrots with some olive oil, salt, pepper and garlic powder and roast them for about 10-15 min. After taking them out of the oven, mashed them with a fork.
- Spray your pie tin ( I used a cake tin) with baking spray and line the crust. Start arranging your sliced veggies: onion, zucchini, red bell pepper, spinach and on top the roasted mashed sweet potatoes and carrots.
- Bake for 30 minutes.
- Decorate with spinach.
